Creamy Extra Veggie Tomato Soup

1 tbsp olive oil2 cups celery diced2 cups onions diced1 tsp salt2 cans tomato soup (campell's healthy request used in calculation.)4 cups chicken broth (low sodium, fat free.)2-3 tbsp dried italian herbs1-2 tsp red pepper flakes (optional)
Over low-medium heat, add olive oil, celery, onions and salt to 4 qt pan or stock pot. Saute for 15-20 mins. or until onions are translucent. Add the tomatoes, condensed tomato soup, chicken broth and herbs and spices. Mix well. Bring just to boil and remove from heat. Blend if you prefer a smoother soup. Just before serving, once the soup in individual bowls, pour 1 tbsp of Fat free half and half into center of each. Enjoy!
