Eggplant Quiche

(this recipe can be easily doubled based on the size of your eggplant)1/2 lb eggplant sliced into cubes 1/2 tsp salt1/4 cup dice onions1 clove garlic1/2 tsp pepperCooking spray----------------------------1/3 cup cheese (your preference, I used cheddar)1/2 cup milk (could save calories with skim)3 eggs whites (liquid or mix are fineItalian seasoning to your preference
Preheat over to 425
Cook the eggplant, salt, onions, garlic and pepper in a frying pan until the ingredient are cooked and soft.
Mix the cheese, milk, egg whites and seasoning in a mixing bowl while the eggplant mixture cooks.
Mix the eggplant mixture into the mixing bowl until evenly spread.
Pour into a glass baking pan. (Add a crust if you want, but it will add calories)
Bake for 30 minutes (watch carefully, oven times can vary widely on baking egg based food)
Once finished (solid and browned slightly), remove and let it set for 10 minutes to firm up.
Cut into 4 slices.
