Chocolate Tiramisu (no coffee)

Ingredients
~ 8 oz Philadelphia 1/3 Less Fat Neufchatel Cheese (room temp)~ 1 pkg Jell-o Pudding, Cheesecake Flavored (Sugar Free/Fat Free - 1 oz)~ 2 c Skim Milk~ 1/4 c Fat Free Sour Cream~ 2 1/2 tsp Imitation Rum Extract (McCormick)~ 1 tub Cool Whip Lite (8 oz) (refridgerated, not frozen)~ 40 Reduced Fat Nilla Wafer Cookies~ 1/2 c Hershey's Chocolate Syrup, Sugar Free~ 1 tsp Unsweetened Cocoa Powder~ 1 tsp Ground Cinnamon
Directions
In a medium bowl beat cream cheese until smooth. In a separate bowl, mix pudding and milk according to directions on the box. Add pudding to the cream cheese and mix until well combined. Add in sour cream and rum extract. With a spatula, fold in softened Cool Whip until it is fully incorporated.

In a 13 x 9 inch pan, completely cover the bottom with a small amount of cream. Place wafer cookies in rows across the bottom (mine just perfectly made 8 cookies x 5 cookies rows). Pour the chocolate syrup over the cookies and spread evenly with a knife, if desired. Pour remaining cream over the top of the cookies.

In a small dish combine cinnamon and cocoa. With a spoon, or a fine mesh strainer, gently tap cocoa/cinnamon mixture over the top of your tiramisu.

Refridgerate about 6 hours, or overnight.

Makes 16 servings, approx 3 1/4 x 2 1/4 inch pieces.

**Note - I also like making this with 7 oz of lady fingers, which brings the calories up to 137 per serving and makes this a little less sweet, if you prefer to use those.**

    I thought it was really good. The rum does give it a kind of egg nog taste to it just as an FYI if you don't like eggnog. I do though, so I loved it! Yummy! - 1/28/09

    Thanks for mentioning the eggnog taste! If anyone doesn't like the taste of eggnog quite as much, you can reduce the rum flavoring by a teaspoon to make it a lighter flavor and not so dominant. Thanks everyone for your comments! :)
