Ingredients
2 cups cooked black beans2 cups white rice, medium grain, cooked1 medium onion, about one cup, chopped1/2 cup green bell peppers, finely diced2 garlic cloves, crushed and finely chopped5 tbsp cilantrosalt and pepper to taste
Directions
In a hot skillet, sprayed with non-stick spray, cook onion and pepper for about two to three minutes, until they are soft. Add garlic, beans and rice. Mix and heat throughtly. Season to taste. Add cilantro before serving. Can be served with scrambled eggs, queso fresco, avocado, beef, etc (calories will be extra).
Makes 5-6 servings.
