Baked Shrimp with Feta

1/2 T Olive OIl (recipe originally called for 1T)1 med onion2 cloves garlic2 14.5 oz cans diced tomatoes (italian style if you like)1/4 C fresh parsley or 2T dried1/4 C fresh dill or 2T dried2/3C Feta1-1/4 lb raw shrimp1/2 tsp salt1/2 tsp black pepper
Pre-heat oven to 425
Heat oil in an oven safe skillet. Dice up onion and saute for 3 min or until soft. Add in minced garlic and saute another min or so. Add the 2 cans of tomatoes, parsley, dill, salt & pepper and simmer about 5 min to reduce the juice. Stir in the raw shrimp and sprinkle the feta on top. Bake about 12 min and serve.
