Wild Ginger Dressing

Half a mild onion, 1/2 c. sunflower oil, 1/3 cup RICE vinegar (I put apple cider vinegar on the list b/c that's all that was in the database!), 2 TB filtered water, 2 TB minced fresh ginger, 1/4 stalk celery, 2 TB tamari, 1 1/2 tsp. raw, unrefined sugar, 1 1/2 tsp. lemon juice, 1/2 tsp. sea salt, 1/4 tsp. ground black pepper
Combine all ingredients in a blender and process until smooth.
