Pig Picking Cake

Ingredients
1 yellow cake mix (with pudding)4 eggs.5 cup canola oil11 oz can mandarin oranges (juices included)Topping1 pckg sugar free vanilla pudding.5 cup milk20 oz can crushed pineapple12 oz whipped toppingPecans (optional)
Directions
Combine cake mix, eggs, oil, and oranges in a large bowl. Blend on low speed for two minutes. Grease and flour two-layer cake pans, or a 13x9 loaf pan. Bake at 350 for 33 to 38 minutes, test for doneness with toothpick.

Mix pudding mix with milk until thick. Drain pineapple, reserving juice. Add pineapple and whipped topping to pudding.

When cake has cooled, poke holes in the cake with a fork. Pour reserved pineapple juice evenly over the cake. Frost with pudding mixture. Top with pecans if desired.

Keep in refrigerator. Enjoy!
