Cracked Wheat Upma

Ingredients
2 cups cracked wheat4 cups water1medium tomato chopped1large shallot chopped fine1/2 cup green peas1/2 cup chopped french beans1/2 cup chopped carrots4green chillies slit lengthwiseSalt to taste(sea salt)1tbsp ghee (clarified Butter)1 tsp mustard seeds (black)1/2 cumin seeds1/2 asafoetida powder (hing)8 curry leaves5 tbsp chopped green coriander (cilantro) leaves for garnish1/2 cup fresh grated coconut for garnish (optional)
Directions
Dry roast the cracked wheat in a wok till change in colour.This gives out an appetising aroma when done.Remove and keep aside.Heat ghee in another pan and add mustard seeds,cumin seeds,asafoetida powder and the curry leaves.When these sputter,add the chopped shallots and cook these till transclucent.Add green chillies and chopped tomatoes and cook till tomatoes have softened and released the juice.Add the roasted wheat and mix well together. Now add the chopped vegetables and salt to taste.Pour in 4 cups of boiling water.Cover and steam till the water is absorbed.The consistency should be dry and spongy.Garnish with chopped fresh coriander (cilantro) and shredded fresh coconut and serve hot.
