Vegetarian Chickpea "Tuna" Salad

Ingredients
1 can chickpeas (garbanzo beans), drained and rinsed3 tbsp light mayo2 tsp mustard (or to taste)2 tsp pickle relish (sweet or dill, to taste)1 celery stalk, chopped1 carrot, grated (optional, but included in nutritional info here)
Directions
In a bowl, mash the chickpeas using a fork or potato masher. I like it a little chunky, but get it to whatever consistancy you like. Then mix in the rest of the ingredients.

Put it on bread or in pita, and top with lettuce and/or tomato if you like.

If you use the carrot it will make enough for 4 sandwiches. Without the carrot it might just be 3.

    Tried it for the first time and it was really good, definitely will make it again. I didn't put relish or mustard but I added some red peppers, salt and pepper and it tasted good in a wrap. - 11/21/12

    This was a good base for a sandwich spread. I added a little pepper and paprika. Instead of using pickle relish I chopped up a couple dill pickles. I will eat it on Thomas' Everything Bagel Thins. - 1/19/11

    I would add a tablespoon of capers, leave out the pickle relish, add tablespoon of kalamta olives and finely diced red onion. Lots of fresh cracked pepper. Sprinkle with feta cheese, sliced tomato and romaine lettuce on whole wheat bread.. yummy - 8/7/10

    I've made this recipe a couple of times and, for me, it's just a little bland. I always add at least fresh herbs, lettuce, and tomato to the sandwich to it to help punch it up. I'm not sure I'm going to make this anymore but if I do, I'll experiment with different spices or condiments. - 7/19/10
