Grilled Halibut and Fresh Mango Salsa

Ingredients
2 cups plum tomatoes, seeded and diced1 1/2 cups diced peeled ripe mango1/2 cup diced onion1/2 cup chopped fresh cilantro2 tablespoons fresh lime juice1 tablespoon cider vinegar1 teaspoon sugar1 teaspoon salt, divided1 teaspoon black pepper, divided2 cloves garlic, minced4 (6-ounce) halibut fillets1 tablespoon olive oil
Directions
Prepare grill.

Combine first 7 ingredients. Stir in 1/2 teaspoon salt, 1/2 teaspoon pepper, and garlic.

Rub halibut with oil; sprinkle with 1/2 teaspoon salt and 1/2 teaspoon pepper. Place fish on grill rack; grill 3 minutes on each side or until fish flakes easily when tested with a fork. Serve with mango salsa.

Yield: 4 servings (serving size: 1 fillet and 3/4 cup salsa)

    Wonderful - I'm not a fan of mango, but this salsa is excellent, and with the halibut it was a delicate flavor that enhanced. Next time, I'll add a little hot pepper, too. - 4/8/09

    The mango salsa was excellent, I added some grilled and peeled jalapenos for some heat and grilled tuna steaks for budgetary reasons but the salsa is a keeper - 3/20/09
