Southwest Chicken Chili (Slowcooker)

Ingredients
one can of S&W low sodium black beans (rinsed), one can of Campbell's Healthy Request cream of mushroom soup, three FROZEN chicken breasts, one can of Green Giant Mexicorn, and 1/4 cup of red onion (optional topping).
Directions
Combine black beans, soup, chicken and mexicorn in slowcooker/crockpot. Chicken must be frozen to start with, using fresh doesn't work! You can set your crockpot to low and cook for 8 hours, or if you have less time you can put it on high for only 4 hours.

I use a few dashes of hot sauce and light sour cream for toppings, as well as the chopped red onion.

Tip: Make double the recipe and freeze half!

    I made this and did tweek it to make it non-dairy because of sinus issues. Instead of the creamed soup, I put a bottle of 505 Green Chili Sauce. Also, I did not have the mexicorn, so I used some frozen corn instead. Turned out great! I served it with corn tortillas - 3/19/12

    Made a variation of this. 3 frozen chicken breasts. Cream of chicken soup, dark red kidney beans, green peppers, frozen corn, frozen chopped onions. chili seasoning and garlic. Served over rice with cheese and sour cream. next time use more chili seasoning and garlic. - 2/11/11

    The chili actually doesn't need any seasoning... the combination of the beans and soup give it quite enough flavor. :)
