Southwest Chicken Soup

Ingredients
1 box of chicken broth2 chicken breasts4 medium potatoes, peeled and cut into cubesCarrots, chopped or whole baby carrots1/2 to 1 onion, diced1 can kidney beans1 can corn1 can diced tomatoes1 clove garlic, mincedpackage of taco seasoningSalt and pepper to tastePinch of basil, oregano, onion powder, lemon pepper, or whatever spices you have on hand1 bay leaf
Directions
Prep all ingredients except chicken and set to simmer in large pot. I broiled my chicken on high, 10 minutes each side, but you can cook it however you like. Let simmer about an hour on low/medium heat, maybe more, until the potatoes and carrots are soft. Serve alone or with tortilla chips and low-fat sour cream. Yum!
