Low Carb Mini Cheese Cakes

2 blocks 1/3 less fat cream cheese (8oz.) softened 2 Packets of Truvio or 1/4 cup Splenda1 egg1 tsp vanilla extract (or any other flavor you like)2 tsp Lemon Juice1/4 cup of pecans ground1 packet of TruvioSugar Free Rasberry or Strawberry Jam
Cream the softened cream cheese with the Truvio by mixer. Add in the egg and extract and continue to mix. Mix Truvio Packet with ground Pecans. Place one tsp of ground pecans in the bottom of each lined muffin cups , tamp down. Or (Spray each cup with non-stick cooking spray prior to inserting the pecans). Place a heaping spoonful of the mix on top, leaving approximately 1/3 of the cup unfilled. Bake these in a preheated oven at 350 degrees for approximately 20 minutes. Leave them in the metal pan for cooling (to retain shape). Prior to serving place a small
amount of preserves on each cheese cake.
Note: may need to add some cream to thin a bit.
