3 lbs. Chicken Breast, boiled and shreddedEnough water to cover chicken1 tsp. Lemon Pepper Seasoning8 oz. Philladelphia Light Cream Cheese1 1/2 cups Cheddar or Colby Cheese, Low Fat-softened1/2 cup Light Sour Cream2 Cloves Minced Garlic1 tsp. Ground Cumin1 tsp. Chili Powder1/2 tsp.Ground Coriander1/4 tsp. Salt1/8 tsp. Pepper3 Green Onions Chopped1/4 cup Red Onion, Chopped1-3 Tbsp. Pickled Chopped Jalepeno Peppers6 (6in.) Whole Wheat Pita Bread RoundsGarnish: Sliced ripe olives, sliced green onions, shredded Cheddar or Colby Cheese
Comine first 3 ingredients in a large sauce pan; bring to a boil. Cover and reduce heat and simmer 30 minutes or until chicken is done. Remove chicken from broth, discarding broth. Let chicken cool; finely chop meat.
Combine chicken, cream cheese, and next 8 ingredients in a large bowl; stir well. Add green onions, purple onions, and jalepeno peppers; stir well. Slice each pita round horizontally to make 2 rounds. Spread chicken mixture evely over rough sides of pita bread rounds. Cut each round into 8 wedges, place wedges on ungreased baking sheets. Bake at 375 for 8 - 10 minutes or until bubbly. Garnish if desired. Serve immediately. Yeild: 96 appetizers
