1.5 chicken breasts, cut into small, thin, strips1 cup onion, chopped1 cup bell pepper, cut into small strips.5 cups celery, chopped1 cup carrots, cut into small strips.5 cup canned mushrooms3 small cloves garlic, minced finely1 tsp ginger root, grated2 tbsp ketchup1 tbsp brown sugar, packed.5 tbsp Kikkoman Aji Mirin1 tbsp Kikkoman Rice Wine Vinegar1 tbsp soy sauce
Mix garlic, ginger, ketchup, brown sugar, Aji Mirin, rice wine vinegar, and soy sauce in a small bowl. Set aside.
Heat wok to med high heat. Add sesame oil and brown chicken strips. Add onions, peppers, celery , and carrots. Cook until vegetables start to get fork tender and onions become translucent. Add sauce and cook for another 10 minutes. Serve over rice or noodles.
