Mikey's Baked Chicken w/ veggies

16 ounces chicken breast (cut into 4 oz portions)Salt and Pepper to taste1 t. ground rosemary2 potatoes, peeled2 sweet potatoes, peeled20 Baby carrots3 cloves Garlic, smashed.5 onion, cut in large chunks1 T. fresh lemon juice1 T Canola Oil
Preheat oven to 375 degrees. Wash chicken and pat dry. Rub all over with oil. Place in 9x13 baking pan. Generously salt and pepper. Sprinkle with rosemary. Squeeze lemon juice over chicken. After peeling and chopping veggies, place in a bowl and use remaining oil to coat. Make sure to generously salt and pepper them too. Place in baking dish all around the chicken. Bake for 60 minutes or until sweet potatoes and potatoes are cooked.
