Apple Butternut Squash Soup

1 onion, diced2 tbsp butter1 clove garlic, minced2 tsp freshly grated giner1 butternut squash, peeled, seeded, and chopped into one inch cubes2 large apples, peeled, seeded, and chopped into one inch cubes4 cups beef broth
1. Saute onion, garlic, and ginger in butter until onion is translucent
2. Add squash, apples, and broth.
3. Cook on medium heat for ~ 1/2 hour until squash and apples are soft.
4. Puree.
5. Add salt and pepper to taste.
