"Cream" of turnip soup

Ingredients
1 medium turnip, pealed and cubed3 medium potatoes, pealed and cube1 medium onion, chopped1 garlic cloves, crushed1 tsp margarine1 chicken broth cube3 cups water
Directions
Pealed and chopped all vegetables. Heat the margarine in a medium-sized pot. Add the onions and garlic. Add the spices and cooked for about 3 minutes. Add the vegetables, water and chicken broth. Bring to a boil, cover and shimmer for about 30 minutes or until vegetables are soft. Put the soup in a food processor until well blended. Heat and enjoy!
Makes 6 portion of 1 cup each.

    My changes: I used 1/2 pounds turnips, 1.5 pounds of potato, and 4 cloves of garlic. I used 6 cups boxed chicken broth. I added pepper and a bit of salt. Otherwise, all the same. When blended, it made 8 cups of thick, hearty, delicious, filling, YUMMY soup at 103 calories per cup. - 9/15/11

    This was great! I had a co-worker bring over some turnips and potatoes from her garden and I wasn't quite sure what to do with them. I made this soup though and it froze well, reheated well, and was a hit with the husband! I also put in some chopped carrots after blending. - 10/4/09
