Chicken, Kale, and Wild Rice Soup

Ingredients
1 T Olive oil1 onion chopped1 red bell pepper, chopped2 cloves garlic, mincedOne bay leaf1T chopped fresh thyme1 Quart chicken stock or broth3 half breasts of skinless, boneless chicken1/2 bag of frozen kaleOne package of Uncle Ben's Brown and Wild Rice Instant microwave rice (2 servings)1/4 cup of lemon juice4 shakes of Tabasco sauce1/4 cup of fresh dill, choppedSalt and pepper to taste
Directions
Saute the onions, peppers, garlic, bay leaf and thyme for five minutes until soft. Add stock and simmer for a few minutes. Add kale, chicken, and rice. Bring it back to a simmer and cook for about 5 minutes. Add dill, hot sauce, lemon juice and salt and pepper to balance. Makes 8 11/2 cup servings.
