Hamburger Stroganoff Low Carb

Ingredients
* Ground beef, lean, 16 oz * Mushrooms, fresh, 2 cup, pieces or slices * Cauliflower, frozen, cooked, 2 cup (1" pieces) * Cream of Mushroom Soup, 1 can (10.75 oz) * Sour Cream, 1 cup
Directions
1. Cook cauliflower as directed on package.
2. While cauliflower is cooking, brown beef.
3. Once browned and drained, stir in the cream of mushroom soup, sour cream, and mushrooms.
4. Turn onto low and simmer until cauliflower is cooked.
5. Spread cauliflower onto a plate, and add a layer of the meat mixture.

    YOU CAN MAKE YOUR OWN SOUP MIX. I DON'T KNOW IF SPARKPEOPLE HAVE ONE BUT I KNOW TASTE OF HOME DOES. I AM SURE CHEF MEG HAS ONE SOMEWHERE. JUST GO TO TASTE OF HOME AND CLICK IN CREAMED SOUP MIX. THIS SAVES LOTS OF SODIUM AND TO ME YOU CAN'T TELL THE DIFFERENCE WHEN IT IS IN THE CASSEROLE. - 6/13/14

    I too am diabetic, so this was a great idea and the cauliflower was not an odd substitute for the noodles/rice or potatoes. To reduce calories even futher, I used plain nonfat yogurt instead of the sour cream. Next time I may add a pakage of onion soup mix for a little more flavor as well. - 7/7/11
