Totally Excellent Chili with Ground Pork

Ingredients
1-1/2 lb (750 g) lean ground pork2 large onions, chopped2 cloves garlic, squished1 28-oz (796 mL) can tomatoes2 tsp (10 mL) chili powder1/2 tsp (2 mL) curry powder2 tsp (10 mL) ground cumin1 small fresh hot pepper, chopped OR1/4 tsp (1 mL) cayenne pepper2 tsp (10 mL) salt2 19-oz (540 mL) cans red kidney beans, drained and rinsed
Directions
In a large skillet, cook the beef, stirring to break up the clumps, with the onions and garlic until the meat is no longer pink. Add the canned tomatoes (with all their juice) and the seasonings, and simmer for about 30 minutes, mashing the tomatoes with a wooden spoon to break them up. Add the beans and cook for another 30 minutes.

Makes about 6 servings.
