Chicken Zucchini Casserole

Ingredients
1 package (6 oz) stuffing mix3/4 c. butter (melted)3 c. diced zucchini2 c. cooked cubed chicken1 can condensed cream of chicken soup, undiluted1/2 c. sour cream1/2 c. chopped onion
Directions
In a large bowl, combine stuffing mix and butter. Set aside 1/2 cup for topping. Add the zucchini, chicken soup, onions, and sour cream to the remainig stuffing mixture. Transfer to a greased 2 quart baking dish. Sprinkle with a reserved stuffing mixture. Baake, uncovered at 350 degrees for 40-45 minutes or until golden brown and bubbly.

    Used cream of mushroom and made the zucchini in chunks. Everyone loved it . The zucchini was the right texture, not firm or mushy but medium firm - 3/14/15
