Buckwheat Pancakes (with or without Bananas!)

Ingredients

1 1/4 cup Soy milk or Rice milk (or regular milk)1 tbsp lemon juice1 tbsp vegetable oil1 tbsp real maple syrup1/2 cup buckwheat flour1 tsp baking soda1/2 cup Spelt flour (or AP flour or rice flour)1/2 tsp salt2 bananas, sliced* plus extra maple syrup for serving, if desired.
Mix all wet ingredients together in a small bowl.
Mix all the dry ingredients together in a slightly bigger bowl.
Add wet to dry & stir to combine - do not overmix.
Use a cooking spray on your skillet (cover well, pancakes tend to stick!)
Heat skillet over medium heat, ladle pancakes using a 1/3 cup measuring cup. Place sliced bananas on top of each pancake. Cook 1-1 1/2 minutes each side.
Serve with chopped walnuts & real maple syrup.
For added protein, serve a boiled egg or turkey sausage or Canadian bacon on the side!
