Cheddar Chowder

Ingredients
2 c water2 c diced potatoes1/2 c diced carrots1/2 c diced celery1/4 c diced onion1 tsp salt1/4 tsp pepper1/4 c butter1/4 c flour2 c skim milk2 c grated cheddar cheese1 c cubed ham
Directions
Serves 6.

Combine water, potatoes, carrots, celery, onion, salt and pepper in large kettle. Boil 10-12 min. Meanwhile, in small saucepan make white sauce by melting the butter. Add flour and stir til smooth, about 1 min. Slowly add milk; cook until thickened, stirring frequently. Add grated cheese to white sauce; stir until melted. Add cheese sauce and cubed ham to vegetables that have NOT been drained. Heat through.
