Sopa de Frijol Rojo-Red Bean Soup

Ingredients
1.5 pounds of dry red beans 12 cups of water (you may need to add more depending on how much soup you want after beans completely cooked)1 small bell pepper (green) - sliced1 small white onion - sliced 1 cup of cilantro - whole pieces including stem2-3 garlic cloves4 tbsp beef buillon (rib flavor preferred) may need to add more depending on your taste
Directions
throw everything into one big pot and cook on medium high until beans are tender to the touch about 1 1/2 hours


you may need to add water as you go, water evaporates quickly

You may want to soak beans in cold water through the night or a couple of hours before for faster cook time
