1 T EVOO1 boneless skinless chicken breast, diced1 med onion, diced2 t minced garlic1 c chopped fresh parsley2 cups chopped kale2 cups frozen peas and carrots4 cups Swansons chicken stock, reduced sodium4 cups water3 cups uncooked enriched egg noodles1 t Tabasco sauce
Heat EVOO in soup pot. Add next 6 ingredients. Saute till onions are translucent. Add stock and water. Bring to a boil, then add noodles and Tabasco. Return to a boil, then cook according to directions for the noodles.
