Mediterranean Cottage Cheese Muffins

1/3 cup 2% fat cottage cheese (may also use no fat)2 large eggs1 1/2 tablespoons water2 tablespoons sun dried tomatoes, oil packed1/2 cup mushrooms1 tablespoon almond meal2 tablespoons feta cheese, low fat2 tablespoons chopped kalamata olives1/2 cup chopped artichoke hearts1/4 cup scallions1/4 cup whole wheat flour
Preheat oven to 400 degrees F.
Mix all ingredients together in a bowl. Pour batter into well sprayed paper muffin cups (or use silicon muffin cups). Bake for 20 - 23 minutes until top starts to brown.

it is actually ground almonds -- you could probably leave it out and just add a bit more flour.

I really use this as a jumping off point -- I make them with salmon and dill subbing parm for the feta, or ham and cheddar, or spinach and mushrooms. Really you can put in anything you like.
