Tuscan Bean and Chicken Soup

Ingredients
2 chicken breast roasted in oven and then shredded3 carrots chopped3 stalks of celery chopped6 cupschicken broth 99% fat free(may use water to make up difference)1 can cannelini or small white beans(rinsed)1/2 cup spinach chopped1 tbsp fresh rosemary chopped2 tbsp fresh parsley chopped1 hard rind of parmesan cheese1 clove of garlic bruised
Directions
Roast chicken in 350 degree oven for 30 mins. Allow to cool and then shred.

heat chicken stock over med-high heat
add celery and carrots and cook until tender, about 10 mins.
add shredded chicken, cannelini beans, parsley, rosemary, bruised garlic clove and parmesan cheese rind. Continue to heat 30 mins until flavors blend. Add chopped spinach and remove clove of garlic and cheese rind before serving.
