Ham Fried Rice

Ingredients
2 cups of brown rice (precooked)1 tbsp olive oil4 egg whitesabout a tsp of 1% or skim milk1 cup ham diced1 can of peas and carrots drained1/2 cup of fresh mushrooms1 tsp garlic1 tsp pepper1 tsp saltoptional - soy sauce or cayenne pepper, cheese
Directions
Makes about 6 1/2 cup servings.

Beat egg whites and milk.

Fry precooked rice in olive oil. Add all remaining ingredients and stir fry for about 10 minutes.

Add cheese and/or cayenne pepper or soy sauce when served.
