Amazing Fruit Compote with Basil

Ingredients
1 cup Splenda 1 cup Water1/4 cup Honey2 tsp Vanilla Extract2 tbsp Orange Juice (or another clear juice)2 tsp Cornstarch1 tbsp Water1/2 cup dried Basil8 cups assorted fruits and berries such as strawberries, cherries, blueberries, raspberries, blackberries, and peaches (frozen fruits work as well as fresh fruits)
Directions
1. In a small saucepan combine the cup of water, splenda, honey, vanilla, and juice. Bring to boiling; stirring to dissolve splenda. Reduce heat and simmer, uncovered, for 5 minutes.

2. Stir together cornstarch and 1 tbsp cold water. Add to saucepan stirring frequently.

3. Cook and stir until thickened and bubbly. Then, cook and stir for 2 more minutes. Allow to cool slightly.

4. Mix fruit and basil in a large bowl. Add sugar mixture to bowl and stir gently to coat.

5. Cover fruit and let stand at room temperature for an hour. Stir once or twice.

6. Chill and serve with sherbet or alone.
