Ingredients
I box of Philsbury Reduced Sugar Devil's Food Chocolate Cake Mix1.5 cups fresh, cooked, pureed pumpkin
Directions
Mix entire box of cake mix with pumpkin well. Scoop into mini muffin pan sprayed with cooking spray. Bake in 350 oven for 12 minutes. Makes 40 mini muffins - you might be able to stretch it out to 48 if you don't fill each muffin cup - nutri stats are for 40 mini muffins. You can toss in a cup of chocolate or peanut butter chips after mixing for added flavor. (chips not in nutri stats)

    You can take any cake mix, add a 15 oz can of pumpkin and a 1/2 cup of water. Mix well and bake cupcakes according to the box mix. Try to stretch it out to 24 cupcakes. If you are on Weight Watchers and are tracking points, these cupcakes would be 1 point. - 2/10/09

    These were good. I used organic canned pumpkin and some of the water like daisydog166 reco. It needed longer to cook and they were super super moist almost too moist. My BF didn't like them at all said they tasted like diet bars from the health food store, but it took care of my chocolate cravings. - 2/15/09
