Chicken with Israeli Couscous (Slowcooker)

2 Tbs butter1 tsp minced garlic1 1/2 c fat free reduced sodium chicken broth2 Tbs white wine 3/4 tsp black pepper3/4 tsp kosher salt1/3 c Israeli couscous1/2 medium onion, finely chopped2 celery stalks,finely chopped2 large carrots, peeled and finely chopped5 IQF 3 oz chicken breasts1 Tbs fresh parsley, chopped for garnish
Season chicken breasts with salt and pepper. Add all ingredients to the slow cooker except for seasoned chicken breasts and mix well to combine. Place chicken on top of the mixture.
Cover and cook on low for 6 hours. To serve, transfer chicken to individual bowls. Mix the couscous and vegetables well, then spoon into the bowls alongside the chicken. Sprinkle with fresh parsley if desired.

This was pretty good. The couscous gets a mushy consistency, although still tastes good...if you like couscous for it's fluffy consistency you might be disapointed with this. I did add Cumin and a pinch of Ginger and doubled the amount of couscous, which only adds 50 cal per serv - 7/8/09
