Cheesy creamed cauliflower

Ingredients
1/3 envelope Idahoan instant potatoes (any flavor)279 grams Cauliflower, raw (about 2 cups)1/4 cup Tillamook Lite Sour Cream3/4 cup shredded Colby and Montery Jack cheese3/4 cup Waterblack pepper to taste
Directions
Chop cauliflower into small pieces, put in a microwave safe bowl with the water. Cover and microwave 7-10 minutes, or until cauliflower is soft. Puree with an immersion blender, add the rest of the ingredients & stir well.
Makes 4 servings, approximately 1/2 cup each.
