Baked Lemon-Chili Salmon with Tomatoes and Onions

Salmon Fillet6 Baby Tomatoes (plum or cherry), halved2 Spring Onions (scallions), sliced into 1cm pieces1 Clove Garlic, sliced finely1/2 tsp grated Lemon ZestJuice of half a Lemon1/2 tbsp Olive Oil1/2 tbsp Fresh Flat Leaf Parley (chopped)1 Bird Eye Chilli, sliced with seedsSalt & Pepper to season
Makes 1 serving
1. Mix the tomatoes, spring onions, garlic, lemon zest, lemon juice, olive oil, parsley, chilli and salt & pepper in a bowl.
2. Place most of mixture onto a piece of tin foil before placing the salmon on top, making sure the juices don't run away by raising the tin foil to form the base of a parcel.
3. Spoon the remaining mixture on top of the salmon. Lift the long sides of the foil together and roll to close loosely above salmon. Take each end of the parcel and roll tin foil to seal each end.
4. Bake in the oven for 20-25 minutes.
5. Serve the salmon making sure to use all the tasty juices from the parcel. Green salad and baby new potatoes go perfectly.
