Chicken Marsala

4 chicken tenderloins (4 oz each)1/4 cup whole grain flour1/2 teaspoon salt1/2 teaspon pepper1 tablespoon olive oil1/2 pound fresh mushrooms1 tablespoon butter1/2 cup low sodium chicken broth1/2 cup Marsala wine1 teaspoon lemon juice
Flatten chicken tenderloins to 3/4 inch thickness. In a large plastic bag, combine flour, 1/4 of the salt and 1/4 of the pepper. Add chicken and shake to coat.
In a large nonstick skillet, cook chicken in oil over medium heat for app. 7 minutes on each side or until golden brown. Remove, but keep warm.
In the same skillet, saute mushrooms in butter for four minutes. Stir in the broth and marsala wine. Cook on medium heat for 12-15 minutes for until liquid is reduced. Stir in lemon juice and remaining salt/pepper.
Serve over chicken.
