I box (2cups) orzo or cous cous, prepared1 lemon, jucied and zested3 extra virgin olive oil1 small red onion2 large peppers (i use red and orange)1 cup finely chooped parsley
Prepare pasta by box directions using i tablespoon oil. fluff with fork. mix juice, zest, and oil in a large bowl. dice onion and peppers in a 1/4 inch dice. combine everything together and add salt and pepper to taste. serves 10 side dish portions or 5 main salad portions.
