white bean and escarole soup

1 quart Imagine no-chicken organic vegetable broth1/2 large onion, chopped1-2 T olive oil2-3 cloves garlic1 head escarole, cleaned thoroughly and roughly cut1 can cannelini beans (15 oz)1/4 tsp red pepper flakessalt & pepper to taste
heat olive oil in a dutch oven or soup pot.
saute onion until translucent. add garlic and red pepper flakes. cook for 1 minute then add broth.
add drained beans to broth and heat until boiling.
add the roughly chopped escarole and let cook for 15 minutes or so then turn off the heat. Adjust the seasoning with salt and pepper. Garnish with parmesan cheese (not included in the calorie count).
