Ricotta Crepes (SBD P1)

Ingredients
Directions
* 2 Eggs or equivalent Egg subsitute * 2 Tbsp Ricotta Cheese * 1/2 tsp Vanilla Extract * 1/2 tsp Splenda (optional)
* Beat the eggs and blend in the other ingredients.
* Spray an 8" omelet pan w/ PAM and preheat.
* Pour mixture into pan and allow to set as you would an omelet.
* Flip over once and continue cooking until no longer runny.
* Serve with a thin line of ricotta down the middle and fold over.
I have a small skillet that I use so I split this up and make two crepes. I also drizzle sugar free maple syrup on top and mix a little sugar free strawberry jam with the ricotta that goes inside the crepes (just make sure you count the jam and syrup towards your sweet treats allowance)
