Parmesan crusted Pollock

Ingredients
Pollock (2 filets, about 4 oz each)2Tbls Grated Parmesan2Tbls Seasoned Bread Crumbs2Tbls Light Miracle Whip
Directions
Preheat oven to 425. Line baking sheet with foil sprayed with non-stick cooking spray. Pat filets dry, spread both sides with miracle whip. In bowl mix parmesan and bread crumbs together. Sprinkle cheese/crumb mixture over fish, bake for 15-20 minutes until golden brown. (I usually am working on a side dish and a salad, so I keep my eye on the oven.)

    Have made this using creamy dressing such as Caesar or Ranch in place of mayo, substituting wheat germ for the bread crumbs, or adding Italian seasoning to the dry mixture. Good on any firm fish or even chicken! - 6/26/11
