1 package (.25 oz) active dry yeast2 tbsp brown sugar1 1/8 tsp salt1 1/2 C. warm water4 C. all-purpose flour2 C. warm water2 tbsp baking soda2 tbsp melted butter1-2 tbsp coarse salt or preferred topping (optional)
In a large mixing bowl, add yeast, brown sugar and salt. Test water temp with thermometer. When 110 degrees, add to bowl. Stir well to dissolve. Add flour, stir well.
Knead dough on floured surface until smooth and elastic, about 8 minutes. Grease a large bowl and place dough inside, then flip it upside down to coat it entirely. Cover with a towel, put in a warm spot, and let rise for an hour.
Combine 2 cups warm water (110 d.) and baking soda in small pan. After dough has risen, divide into 12 pieces. Roll each piece into a rope about a foot and half long. Twist into whatever shape pleases you, dip into baking soda mixture. Place on cookie sheets and let rise 15-20 minutes.
Bake at 450 for 8 to 10 minutes, or until golden brown. Brush with melted butter, and sprinkle with topping.
