Broccolli Cheese Soup

1 28 oz. frozen chopped broccoli1 can fire roasted tomatoes1 can (drained) chopped green chiles1 carton beef broth1 lb. box 2% Velveeta
Add first 4 ingredients to a stock pot. Bring to a boil, then reduce heat and simmer 30 minutes or until broccoli tender. Reduce heat to low and add cubed Velveeta, stirring occasionally until cheese is melted. I let this soup cool completely and then divide into 6 individual serving bowls (with lids) and use for lunches. It can be frozen as well.
