Crock Pot Cabbage Soup

Ingredients
1/2 large head cabbage (white or red)2 cans diced tomatoes (any brand or type)1 cup Campbell's sodium reduce chicken broth1 tbsp dried garlic chips1 tbsp fresh (or dried) oregano1 tbsp whole rosemary1 tbsp dried parsley1 bay leaf (medium to large size)
Directions
Sprinkle all of the dried spices evenly on the bottom of a crock pot. Place the bay leaf in the middle. Layer chopped cabbage, onion (cut into chunks) and canned tomatoes by placing a layer of cabbage, a layer of onion and one can of tomatoes then repeating. Pour the chicken broth over the layers. Cover and simmer in "Crock Pot" on the low setting for at least 4 hours or cook on high setting for at least 2 hours.

This should make 12 to 14 servings which you can munch on for a couple of days. This packs well for lunches or freezes well for later.

Those who are strictly "Vegan" can substitute vegetable broth or water for the cup of chicken broth.
