Quick Indian Beef

Ingredients
2-3 cloves mince garlic1 med-large onion coarsely chopped3-4 stalks celery in 1 inch pieces1-2 stalks broccoli coarsely chopped1 red pepper cut into thin slices1 lb flank steak trimmed and cut into 1 inch pieces 1 can diced tomatoes, low or no sodiumHot chili oil or hot sauce
Directions
Spray a wok or pan with cooking spray, chop vegetables and slice beef into 1/2 inch to 1 inch pieces.
Saute onion, celery and garlic until onions begin to get soft on med-high heat. add spices, stir to mix, then add beef. saute quickly until cooked medium rare, add remaining vegetables and canned tomatoes and hot oil to taste. Cook through until vegetables are tender. Serve over rice if desired.

I use salt free canned tomatoes and chili oil instead of hot sauce. Use any other vegetables you have handly, peapods, cauliflower, etc, all work well.

Also try this with chicken, shrimp or tofu. If using tofu, cook tofu first, remove from pan, cook vegetables and then combine the two on the plate.

    This was good, but it says add spices: What spices? Don't assume everyone making this is Indian. I will definitely have to play with this the next time, by the end all I tasted was tomatos and heat, not real flavor.

    We thought it was OK, but bland. We added garam masala, curry powder and hot sauce which helped quite a bit. I didn't really get the "Indian" feel though; it seemed more Asian. All in all, not bad but won't be on our list to make again right away. - 3/23/10

    Was confused on the "add spices" part. I added red curry powder becuz it sounded bland without something! Was still very bland. Good but bland like it was missing something. - 1/21/08

    sounds really good, but i'll use less tomatoes because they have a way of dwarfing other tastes/flavours. i'll add green peppers to mine and spring onions too. for spice, i'll add thyme, curry and a little cilantro. thanks for sharing - 3/10/11
