Couscous Cucumber Salad with Buttermilk Dill Dressing

Ingredients
1/14 cups water1 cup whole wheat couscous1/2 cup low fat buttermilk1/4 cup plain, non-fat yogurt2 Tbls. chopped fresh dill2 Tbls white vinegar1 Tbls extra light olive oil1/2 tsp salt1/4 tsp black pepper1 cup chopped red bell pepper1/4 cups chopped scallions (green onions)2 lg. cucumbers, peeled, quartered lengthwise and sliced
Directions
Bring water to a boil and gradually stir in couscous. Remove from heat; cover, and let stand 5 minutes. Fluff with fork; cool.

Combine buttermilk and next 6 ingredients in a large bowl. Add couscous, pepper, onions, and cucumbers. Toss gently and serve.
