2 C Instant Brown Rice2 C Water2 Tbsp Olive Oil1/2 Package of Frozen Mixed Vegetables1/2 C Canned Mushrooms (drained)2 Cloves of Minced Garlic2 Tbsp Soy Sauce1/2 tsp Ground Ginger1/2 tsp Red Pepper Flakes (optional)1/2 tsp Curry Powder or Fenugreek (optional)
Put water and Rice in a pan and bring to a boil. When it starts boiling, reduce heat, cover and simmer for five minutes.
In a frying pan over medium heat, heat the olive oil, mixed vegetables, mushrooms, and garlic (and meat if desired). When the liquid is almost evaporated, add the soy sauce and spices. let it simmer for a minute or two. Stir in the rice and remove from heat.
