Banana Oat Bran Muffins

1 cup Oat Bran1 cup Whole Wheat Flour1 tsp. baking soda1/2 tsp salt2 Tbsp. Sunflower Oil6 Tbsp. Buttermilk1 Lg egg4 Tbsp. Maple syrup1 tsp.Vanilla extract1 Cup Pureed Bananas (approx 3 med.)1/4 cup chopped walnuts or mini chocolate chips(optional)
Makes 12 large muffins
Preheat oven to 375 deg. f.
Measure dry ingredients into a med size bowl.
Measure oil, milk, egg, syrup & vanilla in another small bowl. Blend with hand blender until frothy
Blend or mash banana until creamy.
Add the wet ingredients all at once to the dry, and stir just until moist. Stir in walnuts or mini -chocolate chips . Put in muffin cups lined with papers and bake for 20 min.
