1 cup Old Fashion Oats (soak in milk listed below)1 1/4 cups non fat milk1/2 cup whole wheat flour (actual recipe calls for whole grain pastry flour)1 1/2 cups oat bran2 tsp ground cinnamon1 Tbsp banking powder3 Tbsp Spenda brown sugar3 egg whites2/3 cup sugar free applesauce1 Tbsp canola oil2 tsp pure vanilla extract1/2 cup dark raisins, chopped dates, chopped figs, dried tart red cherries, or chopped walnuts (optional) above nutritional calculations include raisinsI added in 2 Tbsp of flax seed (great for lowering cholesterol and you don't know they are there)
Preheat the oven to 425 and coat muffin tin with nonstick cooking spray or line with paper banking cups. I spray the paper cups with butter flavor cooking spray. Combine dry ingredients and wet ingredients seperately. Mix each well and then combine wet to dry. Add raisins and/or nuts once all is combined.
Fill muffin tins, place in preheated oven and lower to 400. 17-20 minutes or until lightly browned
