Ingredients
1 Can organic black beans1 lb extra lean ground beef (96/4)2 TBSP chili powder1 Tbsp onion powder1 Tbsp garlic powder 1 cup minced or finely diced onion (opt)1 Cup water1 Small can green chiles1 Can mild red enchilada sauce (used El Paso)8 latortilla factory low car whole wheat tortillas (small)4 cups fat free Shredded cheddar cheese
Directions
Brown ground beef and onion. Drain black beans and add to pan. Add chili powder, onion powder, and garlic powder seasoning, green chiles, and water. Stir together well. Let sit over medium heat until all the liquid has been absorbed into meat and beans (about 5-10 mins).
Divide meat/beans equally into 7 tortillas. Roll up tortillas and place in 9X13 baking dish. Pour enchilada sauce over top of tortillas. Sprinkle cheese over top of tortillas. Bake in oven (375)° for 20 mins, or until cheese is bubbly.
