chick pea and roasted red pepper salad

Ingredients
1 can (15 ounces) chickpeas, rinsed and drained1/2 small red onion, quartered and thinly sliced1/2 cucumber, peeled, seeded, and chopped1 roasted red pepper, chopped3 plum tomatoes, chopped2 tablespoons chopped parsley2 cloves garlic, chopped3 tablespoons lemon juice2 teaspoons extra-virgin olive oil1/4 teaspoon salt1/4 cup feta cheesecapers (optional)Roast red peppers. Chop all ingredients while peppers are roasting. Toss all ingredients together and season to taste. Salt, pepper and garlic powder are a good start! You may want to skip the olive oil and lemon juice and just use a favorite Italian dressing.
