Salmon baked in parchment paper

4oz fillet of Salmon fish1/2 tsp. olive oil0.5 cup frozen green beans (vegetables)1 tbsp capers1/2 tomato (sliced)1/8 onion (sliced)1/4 lemon (sliced)1 tbsp. white winesalt & ground pepper
Preheat the oven 400F.
Drizzle olive oil on top of parchment paper.
In the middle of the parchment put the following ingredients one by one on top of each other: green beans, fish fillet, salt and ground pepper, capers, thin slices of lemon, diced onion, diced tomato. Pour the white wine on top of it.
Fold parchment on the edges like an envelope. Place on baking sheet. Bake at 400 degrees for about 25-30 minutes.
Cut top of paper open and serve in paper.

This Is such an awesome recipe. I made this in tin foil in my oven and everyone in my family ate it all and asked for seconds.. That includes my two year old and three year old and very very picky about fish hubby. Thank you so much. I just love the capers too. - 3/5/09

It should be a white wine, definitely. Because it is a fish dish. Not sweet, not sparkling. A table dry wine. Our family prefers Chardonay or Sauvignon Blanc.

I made this for dinner tonight. I didn't have lemons or wine on hand though. I used concentrated lemon juice and no wine. I will make this often. - 3/2/09

I live in Florida, lemons are in my yard. :) The wine and lemons, the type of the fish or vegetables are absolutely optional and can be substituted easy. :)

My husband loves salmon too. And this is one of his favourite recipes. And it is a very easy and quick dish to cook.
